Shiitake - a tree mushroom
Shiitake (Lentinula edodes) is a member of the family of the swindling relatives (Marasmiaceae). These Saprobionts live in the dead organic matter and use it as a basis for their growth. The natural distribution areas of Shiitake mushrooms are mainly in China and Japan. Here the mushrooms settle mainly on the tree trunks of the native Pasania tree, a chestnut species. Therefore Shiitake are to be found in Germany sometimes under the name Pasaniapilze.

The shiitake has a brownish hat, which can reach a diameter of 15 centimetres. The colour varies between light and reddish brown, with the mushrooms darkening at the end of their life cycle. The fine lamellas lie close together. The meat is also brownish, usually lighter than the hat and pleasantly juicy. However, the flesh of the shiitake does not feel wobbly, but is predominantly firm.

These mushrooms were already introduced to Europe at the beginning of the 20th century. The Shiitake gained a high degree of popularity however only in the last decades, when its undisputed meaning as a medicinal mushroom found a high acknowledgment.
